Firecracker Chicken

Last night I decided to try another one of Spicentice kits – Firecracker Chicken! I adapted the ingredients slightly to adjust to what I had at home and it was delicious.

I thought Firecracker Chicken sounded spicy and was worried that the hubby would find it too spicy but it had just the right amount for him and the kids. I added chilli flakes to mine as I love hot food! I eat super spicy food so for me this was a mild spice kit but I know many will probably find this just right for them. Below is the list of ingredients you will need to make this recipe with the spice kit, it is quite a straightforward recipe.

I used Crucials Chilli Ketchup for an added spicy kick but you can use just regular ketchup. Remember to double check syn values for yourself as different brands of sauces vary in syn values.

We all loved this meal and would have it again.

Syns: 2 syns per serving

Time Taken: 45 minutes (plus marinade time)

Ingredients

  • 3 chicken breasts
  • 2 medium onions, chopped
  • 1 tbsp ginger/garlic paste
  • 1 cup peas
  • 1 pepper
  • 1 lime
  • Spring onions
  • 2 tbsp tomato ketchup
  • 4 tbsp dark soy sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp plain flour
  • Spicentice Firecracker Sachet
  • Jasmine rice to serve

Method

Chop the pepper and onion into quarters, and chicken into bite sized chuncks.

In a large bowl add the tomato ketchup, hoisin sauce, soy sauce, the juice of 1 lime, 100ml water and Spicentice Firecracker Sachet. Then add 1/2 tbsp. ginger/garlic paste and the chicken. Mix all ingredients together and leave to marinade for at least 15 minutes.

Heat low cal spray oil in a wok over a medium heat. Add the remaining ginger/garlic paste and stir fry for a few seconds. Scoop out the chicken from the marinade and stir fry until the chicken is almost cooked through.

Add plain flour to the leftover marinade sauce and whisk thoroughly. Add to wok with extra water if needed (100ml). Allow to simmer, then add the onions, peppers and peas. Stir fry for 5-10 minutes and then garnish with spring onions.

Serve Spicentice Firecracker Chicken with Jasmine Rice.

Crucials Sauces Syns

You can buy these Crucials sauces from places like FarmFoods and B&M Bargains. They are really handy for adding flavour to food with minimal syns! Below are the syn values that Crucials have provided for their products, all are per tablespoon. Have you tried any of the sauces yet? Do you have a favourite? I love the Yogurt Mint! When I first bought it, I checked up the syns on the app (as you do!) and got really excited at the amount I saw on the screen. I thought it was too good to be true! I carried on eating loads of it with pretty much every food.

I have the habit of looking at syn values of my favourite things every so often just to make sure syns haven’t gone up or down (that would be awesome!). Luckily, I checked on the Yogurt Mint sauce again and realised the syns I had originally found was actually for their Mint sauce and not the Yogurt Mint! You might say so what? It can’t be that much of a difference, but it is. I was having the one that was 3 syns per tablespoon and counting it as only 0.5 syns! I still haven’t come across the full range, I am on the lookout for this Mint sauce that is 0.5 syns per tablespoon, if you have come across it yet please let me know where from!

In the meantime I will carry on enjoying their BBQ sauce which is absolutely amazing!

Lamb Chops

Tonight’s dinner was simply delicious! I cooked lamb chops in JD Seasonings Steak Rub (buy them here) in my Tefal actifry for 20 minutes and they turned out amazing!

I marinated the chops for about 3-4 hours before cooking them. I cooked them in batches of two.

I had mine with bulgur wheat and a speedy salad drizzled with the new Crucials Hot Pepper Sauce (0.5 syn for 3tbsp) I picked up from FarmFoods today.

Making Bulgur Wheat

Makes enough for 2/3 people. Finely chop 2 small onions and then fry till golden brown. Add:

  • 1 tsp of cumin seeds
  • 1 tbsp of tomato puree
  • 1 tsp of ginger/garlic paste
  • 1 tsp of cumin powder
  • 1 tsp of coriander powder
  • 1/4 tsp of turmeric
  • 1 crumble of chicken stock cube
  • chilli flakes to taste (more = spicier)

Fry all together for 3/4 minutes. Add 1 cup of Bulgur wheat, add 1.5 cups of boiling water and simmer for about 10 minutes or until ready.

That’s it. Done.

I am not a huge fan of sauces but when I do have them I’ve got to admit I tend to forget to count them and try to guesstimate how much I had! To really be in control of your weight loss, measuring those sneaky syns will be greatly beneficial to your success. Below are just some average syn values, be aware that different brands may have different syn values, it is always best to check the Slimming World website or app for yourself. Extra light mayo – 1 Syn per level tbsp

Reduced cal salad cream – 1 Syn per level tbsp

Ketchup – 1 Syn per level tbsp

Brown sauce – 1 Syn per level tbsp

Salt ‘n’ vinegar – Free

Tartare sauce – 2.5 Syns per level tbsp

Mustard (made with powder) – Free

Mustard (from jar) – 1½ Syns per level tbsp

Horseradish sauce – 1 Syn per level tbsp.

I have recently come across some Crucial Sauces which are sooo tasty! I get them in my local Farm Foods but I believe you can also buy them in B&M bargains. I haven’t tried the whole range yet, only the BBQ sauce and the Mint sauce.
