Chicken Tikka Pizza

A super easy cheat’s pizza ready in less than 20 minutes! This is syn free when using the wrap as healthy extra B choice and the cheese as part of healthy extra A choice. You can add any of your favourite Free Food toppings, I’ve used Haloodies Chicken Tikka slices for this pizza as they are pre-cooked already making this even easier! You can find the syn values for Haloodies products here. The chicken tikka is available in most supermarkets in the halal chilled food section.

I cut these into slices of 8 making it perfect for tasters sessions for Slimming World groups or any other party.

You can get the pizza seasoning from Aldi, I’ve recently picked it up from my local Aldi for a bargain 29p!!! If you can’t find the pizza seasoning then you can use mixed herbs instead as it works quite well too.

I know cottage cheese may sound weird on a pizza but believe me it does not taste like it once cooked. The cottage cheese gives the pizza a lovely effect, it looks like mozarella cheese once cooked!

Ingredients

  • 1 Weight Watchers white wrap
  • 20g light cheddar cheese
  • Tomato puree
  • Pizza seasoning or mixed herbs
  • Mushrooms
  • Haloodies chicken tikka slices
  • Cottage cheese
  • Spinach
  • Cherry tomatoes

Method

Spread tomato puree all over the wrap and sprinkle some of the pizza seasoning. Add all of your favourite toppings and a dollop some of the cottage cheese around the pizza before sprinkling the cheddar cheese on.

Bake in a pre heated oven on gas mark 6 for around 12-15 minutes till the cheese is melted and golden.

 

Crustless Red Onion and Courgette Quiche

This is one recipe I haven’t made in absolute ages! Mainly because I don’t really buy courgettes but I was given a mahoosive courgette by one of my members that grows his own veggies in his allotment so the first thing that came to my mind was this easy to make quiche. This recipe is perfect for those following Extra Easy SP (EESP) plan as it is packed with Speed and Protein rich foods. You can serve this with a large salad or butternut squash chips to keep it EESP friendly!

Crustless Red Onion & Courgette Quiche

Ingredients

  • 1 large courgette or 2 regular
  • 2 red onions, halved and finely sliced
  • 1 red chilli, deseeded and finely chopped
  • 100g low fat natural cottage cheese
  • 6 large eggs
  • 1 tsp dried mixed herbs

Method

Preheat the oven to gas mark 4.

Coarsely grate the courgette and place in a large sieve. Press down to remove as much liquid as possible and set aside.

Lightly spray a round, shallow baking dish with low calorie cooking spray and set aside.

Spray a large frying pan with cooking spray and place over a medium heat. Add the onions, courgette and chilli and stir-fry for 10 minutes. Season well and transfer to the prepared baking dish, spreading evenly across the base. Spread the cottage cheese over the vegetable mixture.

Beat the eggs in a large bowl, season and add the dried mixed herbs. Pour the egg mixture over the cottage cheese.

Place in the oven and cook for 30 minutes or until set and golden. Remove from the oven and allow to rest for about 15 minutes before cutting into wedges.

Lasagne – Béchamel Sauce

Lasagne is one of my children’s favourite meal, they have it quite often but it is never a Slimming World friendly version for them! They love it with homemade béchamel sauce which can be very high in syns for us slimmers, so I make my own for myself so I can still enjoy the meal guilt free! I use this recipe here for the mince.

Ingredients

  • 1 tub of cottage cheese (plain or flavoured, check if syns! I use Aldi’s cottage cheese with chives and onion, FREE)
  • 2 eggs
  • A pinch of mustard powder
  • 40g light cheddar cheese
  • Seasoning to taste

Method

Blend the cottage cheese with the eggs, mustard and seasoning with a hand held blender till smooth and no longer lumpy.

Add half of the cheese allowance into the cottage cheese mix.

Layer lasagne with mince, lasagne sheets and cottage cheese mix in an individual dish.

Top the lasagne with the remaining cheese and bake in the oven for around 40 minutes till the pasta is cooked. Cook the first 30 minutes with foil over the dish so the cheese doesn’t burn quickly.

 

 

Aldi Shopping Essentials

Below are my Slimming World friendly goodies I picked up from Aldi today. I find Aldi such good value for money. My must-haves I get from there:

  • Cauliflower rice – I usually make pizza with this (recipe here)
  • Cottage cheese – Aldi one is the best cottage cheese. I absolutely love the onion and chives cottage cheese, it is syn free too! I top a jacket potato with it or make crustless quiche with it (recipe here) or eat it straight from the tub! It is sooo good.
  • Fry Light – when on offer I buy a few to keep me going.
  • Salmon – although the price has gone up recently, Aldi salmon is still the best value. I keep it simple by just grilling it for around 10 minutes and add salt and chilli flakes to it once cooked.
  • Quark – you can make so many things with it. Use it for savoury or sweet dishes. I like to make pancakes with it (recipe here)
  • Skinny Latte Brooklea Yogurt – I have to admit that I am slightly fussy when it comes to yogurts. My absolute favourite are the Alpro yogurts. I tend to find other yogurts a little bit too thin in texture. I like the creamier versions and this one from Aldi although is not as creamy as I’d like it to be, it is an amazing flavour and syn free unlike the Alpro yogurts!
  • Passata – you can this in most of the supermarkets and I don’t think there is much difference to the taste. Passata is great for pasta sauces or curries. Syn Rree and Speed Food.

Crustless Quiche Muffins

I love making this SW crustless quiche recipe. There are so many variations to it but this one has to be my favourite. The basic essentials you need are eggs, cottage cheese and Pasta ‘n’ Sauce, you can then add anything you want to it –  any veg or meat/fish of your choice. The possibilities are endless! I made them into muffins but you can easily just make a large one and then slice it up before eating.

Ingredients

  • Packet of Batchelors Pasta ‘n’ Sauce Cheese & Broccoli flavour (0.5 syn for whole pack)
  • 4 eggs
  • 1 tub of cottage cheese
  • Any veg of choice – I used mushrooms, 1/2 red pepper and some spring onions

Method

Cook the pasta in 350ml of boiling water for 10 minutes.

Pre heat the oven at gas mark 6.

Blend the cottage cheese with the eggs in a large bowl and then add the veggies you are using.

Once the pasta is cooked, mix in the cottage cheese mixture with the veggies and place the mixture in silicone muffin cases.

Bake in the oven for around 20-25 minutes till cooked. If you like you can also add some cheese from your healthy extra A choice before placing the muffin cases in the oven.
