Cook for around 15-20 minutes till the potato is done. Blitz.<\/p>\n<p>Add the frozen peas and the mint and cook for a further 5-6 minutes before blitzing again. You can add more boiling water\/stock if you find the soup is too thick, I prefer a thicker soup.
