I do have a Slimming World friendly version of this <a href=\"http:\/\/www.rahema.co.uk\/blog\/jam-coconut-sponge-cake\/\">here<\/a>.\r\n\r\n<span class=\"embed-youtube\" style=\"text-align:center; display: block;\"><iframe loading=\"lazy\" class=\"youtube-player\" width=\"634\" height=\"357\" src=\"https:\/\/www.youtube.com\/embed\/NMUxxz18eKw?version=3&#038;rel=1&#038;showsearch=0&#038;showinfo=1&#038;iv_load_policy=1&#038;fs=1&#038;hl=en-GB&#038;autohide=2&#038;wmode=transparent\" allowfullscreen=\"true\" style=\"border:0;\" sandbox=\"allow-scripts allow-same-origin allow-popups allow-presentation\"><\/iframe><\/span>\r\n<h4>Ingredients<\/h4>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n<ul>\r\n \t<li>225g margarine<\/li>\r\n \t<li>225g caster sugar<\/li>\r\n \t<li>4 eggs<\/li>\r\n \t<li>250g self raising flour<\/li>\r\n \t<li>50g dessicated coconut<\/li>\r\n \t<li>1tsp vanilla extract<\/li>\r\n \t<li>1tsp baking powder<\/li>\r\n<\/ul>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n\r\nTo decorate\r\n\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n<ul>\r\n \t<li>Jam<\/li>\r\n \t<li>Dessicated coconut<\/li>\r\n<\/ul>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n<h4>Method<\/h4>\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n\r\nPreheat oven at 170c.\r\n\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n\r\nGrease and flour a baking tin, I use 9&#215;11 inches tray. Set aside.\r\n\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n\r\nCream the margarine and sugar together till it is light and creamy.\r\n\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n\r\nAdd the eggs, one at a time, followed by a spoonful of the flour.\r\n\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n\r\nOnce all eggs have been added, add the vanilla extract, followed by the rest of the flour, baking powder and dessicated coconut. Mix all ingredients well together and transfer into prepared tin.\r\n\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n\r\nBake in the preheated oven for 30 minutes.\r\n\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n\r\nOnce the cake baked, let it cool slightly before removing from the tin.\r\n\r\n<!-- \/wp:paragraph -->\r\n\r\n<!-- wp:paragraph -->\r\n\r\nMelt some jam in the microwave and spread all over the cake.
